You will need:
Method: Cut up the potatoes into small chunks and chop the spring onion very finely, stopping when you get to the more plant-like bit that doesn’t chop easily. Put these in a bowl. Add the mayonnaise and stir well with a fork. Add the mustard (use a knife, not a teaspoon, but you want about a teaspoonful) and stir that in as well. Serve immediately or keep in the fridge for later. Serves 1-2.
This recipe makes a delicious addition to a lunch or an ideal snack for a train journey. At the same time, it demonstrates the best of several European nations. Kartoffelsalat is a German idea, but it works best with French mustard and English mayonnaise. If you remember that mayonnaise is named after Mayon in the Ballearics (as I’m sure you all do) then you can add Spain (or the Paisos Catalans) to the mix as well. In all, surely up there with the Tour de France and Eurovision as a shining advertisement for the benefits of integration.
